Beer or wine sommelier training for gastronomy professionals

The world of spirits is almost infinitely large and diverse. In drinks and spirits markets, but especially in the catering sector, the chef de service as well as the service staff, the bartender and the chef are expected to be well versed in the various spirits. This is the only way to provide guests and customers with professional and comprehensive advice. It is therefore very important for professionals in the catering and beverage retail sectors to constantly expand and refresh their knowledge. Sommelier training courses are therefore highly recommended as a way of deepening your knowledge of the world of spirits. Depending on previous knowledge and focus, the various courses build on existing knowledge. Participants in wine courses are introduced to the art of systematic tasting according to international standards (WSET®) and the general handling of wine. They learn about the different grape varieties and growing regions and how to skillfully and tastefully combine food and wine. Courses for advanced somaliers deal in more detail with the individual wine varieties, viticulture and innovative service and advice for guests. They put together the wine offer of a restaurant independently. In addition to wine, beer is increasingly establishing itself as a stylish and characterful drink that is no longer only consumed at village festivals and in pubs, but is also increasingly being served in upscale restaurants. Renowned Swiss brewers produce a diverse and interesting range of beer specialties. Beer sommeliers are familiar with the different types of beer, know about the contents and the brewing process of beer and advise customers and guests comprehensively and professionally. Sommelier training is therefore no longer limited to the subject of wine, but is also offered by renowned gastronomy schools on the subject of beer.

Questions and answers

Zielgruppe einer Sommelier Ausbildung sind Unternehmen und Gastgeber, sowie Mitarbeitende aus gastgewerblichen Betrieben, die sich Weinkenntnisse aneignen bzw. in einem aufbauenden Kurs diese vertiefen wollen.

Für jeden, der sich für das Thema Spirituosen interessiert, kann eine Sommelier Ausbildung im Bereich der Spirituosen eine äusserst interessante Weiterbildung darstellen, doch vor allem für Mitarbeitende aus Getränkebetrieben, Restaurationsfachleute, Restaurationsleiter/innen, Kadermitarbeitende aus Gastronomiebetrieben und der Hotellerie, für Geschäftsführer im Hotellerie und Gastro-Bereich, für Barfachleute sowie für Mitarbeitende der Bar und den Chef de Bar kann ein solcher Kurs ganz gezielt ihre Karriere vorantreiben.

Eine Basis Sommelier Ausbildung hat bei GastroSuisse eine Dauer von 4 Tagen zuzüglich einem Prüfungstag. Die Ausbildung zum Schweizer Wein-Sommelier® Zweiter Teil umfasst 11 Schulungstage plus zwei Prüfungstage.

Nicht nur eine Wein Sommelier Ausbildung ist hier in der Schweiz möglich, sondern seit geraumer Zeit auch Expertenausbildungen für andere Getränke, so etwa zum Schweizer Bier-Sommelier, zum Schweizer Spirituosen-Sommelier oder gar zum Schweizer Wasser-Sommelier.

Wer die Sommelier Ausbildung erfolgreich bestanden hat, ist in der Lage, professionell zu degustieren, die Traubensorte zu bestimmen und den Wein genau zu beschreiben. Er oder sie verfügt über ein gutes Wissen über den Weinbau weltweit und kann erklären, welche Zusammenhänge zwischen Bodenbeschaffenheit, Klima, Region und Traube respektive Wein bestehen. Auch kann er oder sie Wein stilsicher servieren und besitzt eine solide Weinkompetenz.

Wer die Sommelier Ausbildung Erster Teil abschliesst, erhält das Attest Schweizer Wein-Sommelier® Erster Teil / Schweizer Wein-Sommelière® Erster Teil sowie das Attest von Wine and Spirit Education Trust London - WSET® Level 2 Award in Wine and Spirits. Wer auch den zweiten Teil besteht, erhält neben dem Abschluss «Wein-Sommelier» respektive «Wein-Sommelière» auch das Zertifikat WSET® Award in Wine and Spirits Level 3
