Barman / Barmaid: A job for night people

Barman / Barmaid - the outdated term for today's bartender. In this profession, resilience is paramount, as you should be able to keep a cool head even in difficult and hectic situations.

You advise guests on their choice of drinks and therefore know all the wines, beers, long drinks and spirits on offer. These are often quite a few, so it is important that you have a good memory. As a bartender, you often work in a noisy and over-stimulated environment. This means that you should remain calm even if several people want to order at the same time and that you have the ability to prioritize.

As a barman/barmaid, you will be responsible for restocking the refrigerated shelves with new bottles etc. at the end of the working day and often also for settling the accounts. In some establishments, it is appreciated if the bar staff speak foreign languages so that tourists can also be offered courteous service.

Die Antwort hängt davon ab, was Sie unter „richtiger Ausbildung“ verstehen. Meinen Sie eine Ausbildung, bei der Sie von Grund auf alles Wichtige erlernen, was Sie benötigen, um zukünftig als Barman / Barmaid arbeiten zu können, dann ja. Denken Sie bei einer richtigen Ausbildung jedoch an eine Berufslehre mit eidgenössischem Abschluss, etwa ein eidgenössischem Berufsattest (EBA) oder eidgenössisches Fähigkeitszeugnis (EFZ), dann lautet die Antwort „nein“. Da es derzeit noch keine eidg. reglementierte Weiterbildung zum Barkeeper gibt, können Ausbildungen und Weiterbildungen in unterschiedlichen Kursen durchgeführt werden.
Da es sich bei einer Ausbildung zum/zur Barman / Barmaid nicht um eine herkömmliche Berufslehre mit eidgenössisch anerkanntem Abschluss handelt, sondern um Bildungsangebote an privaten Barfachschulen oder Barschulen, variieren sowohl Inhalte, Dauer, Prüfungen, Kosten, als auch Kursdaten und Kurszeiten. Meist finden die Weiterbildungen neben den angebotenen Tageskursen auch abends oder an den Wochenenden statt, so dass es auch für Berufstätige aus anderen Branchen möglich ist, einen Barkeeper Kurs zu besuchen und sich im Mixen von Getränken, der Gläser- und Warenkunde, der Gästeberatung und weiteren interessanten Themengebieten ausbilden zu lassen.
Die Inhalte eines Barkeeping-Kurses können sehr unterschiedlich sein und variieren von Schule zu Schule. Dennoch lernen Sie in einem Grundkurs oftmals Folgendes, um für den Beruf des Barman oder der Barmaid gerüstet zu sein:
  • Bar-Fachausdrücke
  • Wichtige Arbeitsutensilien
  • Cocktailkategorien
  • Zubereitung von Cocktails
  • Destillation
  • Masseinheiten
  • Produktkenntnisse verschiedener Spirituose- und GetränkeKategorien
  • Hygiene-Vorschriften und Gastgewerbegesetzgebung
In vielen Barkursen wird zudem das Flairbartending, das Barmanagement und Gästekommunikation behandelt, so dass Sie bitte die Inhalte der einzelnen Weiterbildungen zum/zur Barman / Barmaid direkt bei den Barschulen erfragen und anschliessend vergleichen sollten.
Da es keine allgemeingültige Bestimmung für den Beruf des Barkeepers gibt, können sowohl die Aufgaben, als auch die Pflichten und Kompetenzen unterschiedlich ausfallen. Dennoch ist ein/e Barkeeper oder Barman / Barmaid meist nicht für Personal zuständig, sondern arbeitet alleine, oder in einem Team an einer Bar. Als Personalverantwortlichen bezeichnet man in der Regel den Chef de Bar / Barchef, welcher meist über einige Jahre Berufserfahrung sowie betriebswirtschaftliche und organisatorische Kenntnisse verfügen, welche sie sich beispielsweise in einem Barmanagement-Kurs aneignen.
